Mexican Meat Loaf

Ingredients
  Ground beef 1 Pound
  Ground pork 1⁄2 Pound (Fresh)
  Onion 1 , finely chopped
  Garlic 1 Clove (5 gm), minced
  Egg 1 , slightly beaten
  Oatmeal/Bread / cracker crumbs 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Comino 1 Pinch
  Tomato sauce 8 Ounce
  Monterey jack cheese 1⁄4 Pound, grated
Directions

1 Preheat oven to 325°F. Mix together all ingredients except 4 ounces of the tomato sauce, the cheese and olives. Mold into a loaf shape and place in a buttered baking dish.
2 Top with remaining tomato sauce and the cheese.
3 Bake for 1 hour. Garnish with tomato sauce.
