Mexican Meat Loaf
|Ground beef||1 Pound|
|Ground pork||1⁄2 Pound (Fresh)|
|Onion||1 , finely chopped|
|Garlic||1 Clove (5 gm), minced|
|Egg||1 , slightly beaten|
|Oatmeal/Bread / cracker crumbs||1⁄2 Cup (8 tbs)|
|Tomato sauce||8 Ounce|
|Monterey jack cheese||1⁄4 Pound, grated|
1 Preheat oven to 325°F. Mix together all ingredients except 4 ounces of the tomato sauce, the cheese and olives. Mold into a loaf shape and place in a buttered baking dish.
2 Top with remaining tomato sauce and the cheese.
3 Bake for 1 hour. Garnish with tomato sauce.
