Jerk Chicken Quesadillas With Cool Fruit Salsa

Ingredients
  Shredded cooked chicken 2 Cup (32 tbs)
  Caribbean jerk seasoning 2 Tablespoon (Dried)
  Shredded reduced fat cheddar cheese/Soy alternative 8 Ounce (2 Cups)
  Whole wheat flour tortillas 4 (10 Inch Size)
  Avocado 1 , pitted, peeled, and chopped
  Canned mandarin oranges 11 Ounce, drained (1 Can)
  Raspberry wine vinegar 2 Tablespoon
  Grated lime peel 1⁄2 Teaspoon
  Salt 1⁄8 Teaspoon
Directions

Preheat the oven to 375°F.
In a medium bowl, combine the chicken and jerk seasoning and toss until evenly coated.
Spread 1/4 cup of the cheese over half of each tortilla, then top with 1/2 cup of the chicken.
Top each again with 1/4 cup cheese, then fold each tortilla in half.
Place the tortillas on a baking sheet and bake for 10 minutes, or until the tortillas are crisp and the cheese is melted.
Meanwhile, in a medium bowl, combine the avocado, oranges, vinegar, lime peel, and salt and toss until evenly coated.
Cut each quesadilla in half.
