Cheesy Mexican Eggs
|Green pepper||1 , seeded and diced|
|Onion||1 Medium, diced|
|Diced green chilies||1⁄2 Cup (8 tbs)|
|Tomatoes||6 Medium, diced, peeled if desired|
|Freshly ground pepper||To Taste|
|Monterey jack cheese slice/Cheddar cheese slices||8|
Heat butter in 10- to 12-inch skillet.
Add pepper, onion and green chilies and saute until softened.
Stir in tomatoes, salt, pepper to taste and sugar and cook until thickened, stirring frequently
Place cheese slices atop sauce and let soften.
Break eggs onto cheese, cover and let cook until eggs are desired done-ness, about 3 to 4 minutes.
