Cheesy Mexican Eggs

Ingredients
  Butter 1 Tablespoon
  Green pepper 1 , seeded and diced
  Onion 1 Medium, diced
  Diced green chilies 1⁄2 Cup (8 tbs)
  Tomatoes 6 Medium, diced, peeled if desired
  Salt To Taste
  Freshly ground pepper To Taste
  Sugar 1 Pinch
  Monterey jack cheese slice/Cheddar cheese slices 8
  Eggs 8
Directions

Heat butter in 10- to 12-inch skillet.
Add pepper, onion and green chilies and saute until softened.
Stir in tomatoes, salt, pepper to taste and sugar and cook until thickened, stirring frequently
Place cheese slices atop sauce and let soften.
Break eggs onto cheese, cover and let cook until eggs are desired done-ness, about 3 to 4 minutes.
