Mexican Cinnamon Crisps

Ingredients
  6 inch flour tortillas 8
  Sugar 1⁄4 Cup (4 tbs)
  Cinnamon 1 Tablespoon
  Vegetable oil 2 Cup (32 tbs) (For Deep Frying)
Directions

1. Cut tortillas into 6 wedges each. In a small bowl, stir together sugar and cinnamon until well mixed.
2. In a large heavy saucepan or deep-fat fryer, heat 4 inches oil to 375°F. on a deep-fat thermometer. Fry tortilla triangles, several at a time, 1 to 2 minutes, or until golden brown.
3. With a slotted spatula, remove fried triangles to paper towels to drain. Immediately sprinkle with cinnamon sugar. Let cool completely; store in a tightly covered container.
