Roasted Corn Salsa
|Olive oil||1 Tablespoon|
|Red capsicum||1 , quartered (Pepper)|
|Mild green chilies||3 , halved and seeded (Use Fresh)|
|Garlic||2 Clove (10 gm), unpeeled|
|Chopped fresh coriander||1 Tablespoon (Cilantro)|
|Chopped fresh oregano||2 Teaspoon|
1. Brush corn cobs with oil and cook on a preheated hot char-grill or barbecue for 6-8 minutes or until lightly charred and soft. Cut corn from cobs and place in a bowl.
2. Brush red capsicum and chillies with oil and cook on preheated hot char-grill or barbecue with garlic for 4 minutes or until skins are lightly charred. Chop red pepper and chillies and squeeze garlic from skins. Add red pepper, chillies, garlic, coriander and oregano to sweet corn and toss to combine.
