Grilled Scallops with Salsa
|Chili/Lime oil||1 Tablespoon|
|Crisp tortilla chips||1⁄2 Cup (8 tbs)|
|Pineapple salsa||1⁄2 Cup (8 tbs)|
|Chopped pineapple||4 Ounce (125 Gram)|
|Red capsicum||1⁄4 , finely chopped (Pepper)|
|Green chilies||2 Medium, chopped|
|Coriander leaves||1 Tablespoon (Cilantro)|
|Mint leaves||1 Tablespoon|
|Lime juice||1 Tablespoon|
1. To make salsa, place pineapple, red pepper, chillies, coriander (cilantro), mint and lime juice in a bowl, toss to combine, then stand for 20 minutes.
2. Brush scallops with oil and cook on a preheated hot char-grill or barbecue plate (griddle) for 30 seconds each side or until they just change colour. Serve immediately with salsa and tortilla chips.
