Sausage Filled Tortillas
|Bulk pork sausage||4 Ounce|
|Chopped tomato||1⁄4 Cup (4 tbs)|
|Chili powder||2 Teaspoon|
|Lemon juice||2 Teaspoon|
|Garlic clove||1 Small, finely chopped|
|6 inch flour tortillas||4|
|Refried beans||1⁄2 Cup (8 tbs)|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
|Vegetable oil||1 Tablespoon|
|Salsa||1⁄4 Cup (4 tbs)|
Crumble pork sausage into 8 x 8 x 2-inch dish.
Cover with waxed paper and microwave on high (100%) until very little pink remains, 1 1/4 to 1 1/2 minutes; break up and drain.
Stir in tomato, chili powder, lemon juice, salt and garlic.
Cover tightly and microwave until hot, 1 1/2 to 2 minutes; stir.
Wrap tortillas in damp cloth and microwave on high (100%) until softened, 45 to 60 seconds.
Spread 2 tablespoons refried beans over each tortilla.
Spoon 2 tablespoons sausage mixture onto center; sprinkle with 2 tablespoons cheese.
Arrange tortillas, seam sides down, in dish.
Brush tops with oil.
Cover tightly and microwave until hot, 2 1/2 to 3 minutes.
Spoon salsa over tortillas.
