Margarita Chicken Soup

  Vegetable cooking spray 1 Tablespoon
  Skinned boned chicken breasts 1 Pound, cut into pieces
  Ground coriander 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Garlic 2 Clove (10 gm), minced
  Onion 1 Small, sliced and cut in half
  Canned no salt added chicken broth 29 Ounce (Two 14 1/2 Ounce Cans)
  Cooked long grain rice 2 Cup (32 tbs) (Cooked Without Salt Or Fat)
  Chopped cilantro 1 Cup (16 tbs)
  Lime juice 2 Tablespoon
  Tequila 1 Tablespoon
  Sugar 1 Teaspoon

Coat a large saucepan with cooking spray; place over medium-high heat until hot.
Add chicken and next 5 ingredients; saute 15 minutes or until chicken is done and onion is tender.
Add broth.
Bring to a boil; cover, reduce heat, and simmer 15 minutes.
Stir in rice and remaining ingredients; cook 5 minutes or until thoroughly heated.
