Margarita Chicken Soup
|Vegetable cooking spray||1 Tablespoon|
|Skinned boned chicken breasts||1 Pound, cut into pieces|
|Ground coriander||1 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
|Onion||1 Small, sliced and cut in half|
|Canned no salt added chicken broth||29 Ounce (Two 14 1/2 Ounce Cans)|
|Cooked long grain rice||2 Cup (32 tbs) (Cooked Without Salt Or Fat)|
|Chopped cilantro||1 Cup (16 tbs)|
|Lime juice||2 Tablespoon|
Coat a large saucepan with cooking spray; place over medium-high heat until hot.
Add chicken and next 5 ingredients; saute 15 minutes or until chicken is done and onion is tender.
Bring to a boil; cover, reduce heat, and simmer 15 minutes.
Stir in rice and remaining ingredients; cook 5 minutes or until thoroughly heated.
