Mexican Potato Soup
|Bacon strips||3 , cut into small strips|
|Potatoes||3 Large, peeled and cubed|
|Water||5 Cup (80 tbs) (Or More)|
|Tomato sauce||1 Cup (16 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Green chilies||10 Ounce (Canned Whole / Chopped)|
|Sharp cheese||1⁄2 Pound, grated|
1 Brown the bacon in a large kettle. Add the potato cubes and stir until they are coated with drippings.
2 Add the water, tomato sauce, onion and salt. Reduce heat to a simmer and cook for 1 hour.
3 Place the green cilantro and grated cheese in 6 soup bowls. Spoon hot soup over them.
