I've made shredded chicken for tacos many times so I decided to make a video of it. You can use this chicken in any Mexican or Tex-Mex recipe.
Chicken breast halves
1 1⁄2 Pound
Black pepper and salt
Red chili powder
2 Medium, roughly chopped
1 Large, roughly chopped
3 Clove (15 gm), roughly chopped
1 Cup (16 tbs)
2 Cup (32 tbs)
1)Apply salt and chili powder to the chicken breast and set aside.
2)Heat oil in a pot and brown the chicken breasts skin side down first. Add onions, peppers and garlic along with the chicken broth and water.
3)Cook for a total of 60 minutes with the pressure cooker lid on, 30 minutes on a medium heat and 30 minutes off the stove while it continues to cook.
4)Strain the liquid in the cooker and shred the chicken meat into bits. Mix the chicken and the strained broth together.
5)Best served with chicken tacos or burritos or in your favorite recipes as a filling.
