Mexican Beef Kabobs

Ingredients
  Onion 1⁄2 Cup (8 tbs), chopped
  Olive oil 1 Tablespoon
  Red wine vinegar 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Mexican oregano 1⁄2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Sirloin steak 1 1⁄2 Pound, cut into 1 1/2-inch cubes
  Onions 10 Small, parboiled
  Cherry pepper pickles 12
Directions

1 Cook onion in olive oil until translucent but not brown. Add vinegar, seasoning and garlic. Cover pan and allow to simmer for 20 minutes; cool.
2 Add meat and marinate at room temperature for at least 1 hour.
3 Skewer meat cubes alternately with the onions and peppers. Brush with the marinade. Broil in the oven or on an outdoor grill, basting often until done to your liking.
