Mexican Beef Kabobs
|Onion||1⁄2 Cup (8 tbs), chopped|
|Olive oil||1 Tablespoon|
|Red wine vinegar||1 Cup (16 tbs)|
|Mexican oregano||1⁄2 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
|Sirloin steak||1 1⁄2 Pound, cut into 1 1/2-inch cubes|
|Onions||10 Small, parboiled|
|Cherry pepper pickles||12|
1 Cook onion in olive oil until translucent but not brown. Add vinegar, seasoning and garlic. Cover pan and allow to simmer for 20 minutes; cool.
2 Add meat and marinate at room temperature for at least 1 hour.
3 Skewer meat cubes alternately with the onions and peppers. Brush with the marinade. Broil in the oven or on an outdoor grill, basting often until done to your liking.
