Barbados Black Bean Salsa

Ingredients
  Dried black beans 1⁄2 Cup (8 tbs), washed
  Salt 1⁄3 Teaspoon
  Diced mango 1 Cup (16 tbs) (2 Small Size)
  Seeded diced red bell pepper 3 Tablespoon
  Hot sauce/Other scotch bonnet chili sauce 1 Tablespoon (Coyote Cocina Howlin')
  Fresh lime juice 1 Tablespoon
Directions

Cook the beans for 1 to 1 1/2 hours, or until tender, adding 1/2 tea-spoon salt towards the end.
Drain the beans and let cool.
Transfer to a mixing bowl, add the remaining ingredients, and fold together.
