Barbados Black Bean Salsa

|Dried black beans||1⁄2 Cup (8 tbs), washed|
|Diced mango||1 Cup (16 tbs) (2 Small Size)|
|Seeded diced red bell pepper||3 Tablespoon|
|Hot sauce/Other scotch bonnet chili sauce||1 Tablespoon (Coyote Cocina Howlin')|
|Fresh lime juice||1 Tablespoon|
Cook the beans for 1 to 1 1/2 hours, or until tender, adding 1/2 tea-spoon salt towards the end.
Drain the beans and let cool.
Transfer to a mixing bowl, add the remaining ingredients, and fold together.
