Corn And Ginger Salsa

Ingredients
  Ears of corn 3
  Water 2 Tablespoon
  Ginger juice 2 Tablespoon, squeezed
  Peanut oil 1 1⁄2 Tablespoon
  Sugar 1 Pinch
  Salt 1 Pinch
  Ground coriander seed 1⁄4 Teaspoon
  Red bell pepper 1 , roasted, peeled, seeded, and finely diced
  Dried arbol chilies 2 , crumbled
  Orange juice 3 Tablespoon
  Cinnamon 1⁄4 Teaspoon
Directions

Cut the corn kernels from the cobs with a sharp knife (about 2 cups).
Place in a saucepan with the water, ginger juice, oil, sugar, salt, and coriander.
Cook over medium-high heat for 2 minutes.
Remove from the heat and transfer to a mixing bowl.
Add the remain-ing ingredients and thoroughly combine.
