Mexican Turkey

Ingredients
  Vegetable oil 1 Teaspoon
  Turkey breast slices 1 Pound, each 1/4 inch thick (8 Pieces)
  Chili powder 1⁄4 Teaspoon
  Salsa 1⁄2 Cup (8 tbs)
  Red bell pepper 1 Small, cut into 8 rings
  Shredded monterey jack cheese 2 Ounce (1/2 Cup)
Directions

1. Brush 12-inch plate with oil. Arrange turkey breast slices around edge of plate; sprinkle with chili powder
2. Cover with waxed paper and microwave on high 3 to 5 minutes, rotating plate 1/2 turn after 2 minutes, until juices run clear; drain.
3. Top each turkey slice with 1 tablespoon salsa and bell pepper ring. Microwave uncovered 1 to 2 minutes or until salsa is hot. Sprinkle with cheese. Microwave uncovered 30 seconds or until cheese begins to melt. Serve with sour cream if desired.
