Roasted Tomato And Mint Salsa

|Roma tomatoes||1 Pound, blackened (8 Whole)|
|Serrano chile||1 Small, blackened|
|Orange||1 , peeled, seeded and cut into sections|
|Chopped mint leaves||3 Tablespoon, loosely packed|
|Extra virgin olive oil||1 Tablespoon|
|Fresh orange juice||2 Tablespoon|
|Minced orange zest||1 Tablespoon (Heaping)|
Cut the tomatoes in half and squeeze out and discard the seeds and juice.
Chop the pulp and thoroughly combine with the remaining ingredients in a mixing bowl.
