|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Olive oil/Cooking oil||1⁄4 Cup (4 tbs)|
|Chopped canned green chili peppers||3 Tablespoon|
|Red wine vinegar||2 Tablespoon|
|Mustard seed||1 Teaspoon|
|Coriander seed||1 Teaspoon, crushed|
Combine tomatoes, onion, celery, green pepper, olive or cooking oil, green chili peppers, vinegar, mustard seed, coriander seed, 1 teaspoon salt, and dash pepper.
Cover; refrigerate several hours or overnight, stirring occasionally.
Garnish with green pepper strips, if desired.
Serve as a relish.
