Mexican Bean Cakes
|Canned pinto beans||15 Ounce, drained (1 can)|
|Chopped onion||2 Tablespoon|
|Chopped green chilies||2 Tablespoon|
|Ground thyme||1⁄2 Teaspoon|
|Cubed cooked ham||1⁄2 Cup (8 tbs)|
|Shredded monterey jack cheese||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||1⁄3 Cup (5.33 tbs)|
|Egg||1 , beaten|
|All purpose flour||2 Tablespoon|
|Yellow cornmeal||1⁄2 Cup (8 tbs)|
1. Mash beans thoroughly. Stir in onion, chilies, thyme, ham and cheeses. Shape into 4 patties.
2. Preheat microwave browning grill for 8 minutes on HIGH.
3. Beat egg in shallow bowl or pie pan. Coat patties with flour; dip into beaten egg and coat with cornmeal. Place on preheated grill.
4. Microwave for 2 minutes on HIGH. Turn patties over and continue cooking for 1 to 2 minutes, on HIGH, or until heated.
