Combine pineapple, red pepper, green pepper, onion, parsley, lemon juice and dried red pepper. Cover and refrigerate.
Place roast on trivet in broiler pan.
Set oven to Convection Roast 325°. Cook approximately 1 1/2 hours or until meat thermometer inserted in center registers 160°. Brush with Pineapple Glaze during last 10 minutes of cooking time. Remove from oven and let stand for 10 minutes.
