Glazed Pork Roast With Pineapple Salsa

Ingredients
For salsa
  Finely chopped pineapple 2 Cup (32 tbs) (fresh)
  Finely chopped sweet red pepper 1⁄2 Cup (8 tbs)
  Finely chopped green pepper 1⁄2 Cup (8 tbs)
  Finely chopped red onion 1⁄4 Cup (4 tbs)
  Snipped fresh parsley 2 Tablespoon
  Lemon juice 2 Teaspoon
  Dried red pepper 1⁄2 Teaspoon
For roast
  Boneless pork loin roast 2 1⁄2 Pound (1 whole)
Directions

Combine pineapple, red pepper, green pepper, onion, parsley, lemon juice and dried red pepper. Cover and refrigerate.
ROAST
Place roast on trivet in broiler pan.
Set oven to Convection Roast 325°. Cook approximately 1 1/2 hours or until meat thermometer inserted in center registers 160°. Brush with Pineapple Glaze during last 10 minutes of cooking time. Remove from oven and let stand for 10 minutes.
