|Cinnamon||1 1⁄2 Teaspoon, ground|
|Flour tortillas||12 (each 7 to 8 inches in diameter)|
In a small bowl, stir together sugar and cinnamon; set aside.
Stack tortillas, then cut stack into 6 wedges.
In a wide frying pan, heat 1/2 inch oil over medium-high heat to 350°F on a deep-frying thermometer.
Add tortilla wedges, about 6 at a time do not crowd pan; cook until golden and puffy about 30 seconds on each side.
Drain on paper towels.
As tortilla wedges are cooked, lightly sprinkle with cinnamon-sugar mixture.
