Mexican Spoon Bread
|Cream style corn||1 Pound|
|Cornmeal||1 Cup (16 tbs)|
|Margarine||1⁄3 Cup (5.33 tbs), melted|
|Eggs||2 , beaten|
|Baking soda||1 Teaspoon|
|Canned green chilies||4 Ounce, drained and chopped (1 Can, 4 Ounce)|
|Shredded longhorn cheese||1 1⁄2 Cup (24 tbs)|
Combine the first 6 ingredients; mix well.
Pour half the batter into a greased 9" x 9" x 2" pan.
Then sprinkle with chilis and half the cheese.
Pour on remaining batter.
Sprinkle with remaining cheese.
Bake at 400° for 45 min Cool 10 min before serving.
