Sauteed Turkey In Mexican Brown Sauce
|Vegetable cooking spray||1|
|Vegetable oil||1 Tablespoon|
|All purpose flour||1 Tablespoon (1 Tablespoon Plus 2 Teaspoons)|
|Turkey tenderloins||1 Pound, cut into 1 inch cubes|
|Green pepper||1 Medium, cut into julienne strips|
|Green onions||4 , cut into 1 inch pieces|
|Canned no salt added chicken broth||1⁄2 Cup (8 tbs)|
|No salt added chunky salsa||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Teaspoon|
|Minced fresh cilantro||1⁄2 Teaspoon|
|Cooked long grain rice||2 Cup (32 tbs) (Cooked Without Salt / Fat)|
Coat a large nonstick skillet with cooking spray; add oil.
Place over medium heat until hot.
Add flour, stirring well; cook, stirring constantly, 5 minutes or until flour mixture is dark brown.
Add turkey; saute 3 to 4 minutes or until lightly browned.
Add green pepper and green onions; saute until crisp-tender.
Add chicken broth, salsa, lemon juice, minced cilantro, and salt, stirring well; cook 10 minutes or until turkey is tender, stirring occasionally.
