Pan Fried Duck Breasts With Mango Salsa

Ingredients
  Duck breasts 4
  Garlic 2 Clove (10 gm), thinly sliced
  Paprika 1 Tablespoon
  Olive oil 1 Tablespoon
  Mango 1 Large, peeled, finely chopped
  Red chili 1 , finely chopped
  Lime 1 (Use Grated Zest And Juice)
  Chopped fresh coriander 2 Tablespoon
  Spring onions 1 Bunch (100 gm), sliced
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Make 2 or 3 small cuts in each duck breast and push a slice of garlic into each cut.
Rub each duck breast with a little paprika'.
Heat the oil in a non-stick frying pan.
Add the duck breasts and fry over a medium heat for 5-6 minutes on each side, until cooked.
Mix together all the ingredients for the salsa, seasoning it well.
