Avocados With Fresh Salsa
|Fresh jalapeno/Serrano chiles||3 Small, stemmed and finely chopped|
|Chopped fresh cilantro||1 Tablespoon (Coriander)|
|Green onion with tops||12 , chopped|
|Firm ripe tomatoes||3 Large, peeled, cored, seeded, and chopped|
|Red wine vinegar||1⁄4 Cup (4 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
|Ripe avocados||6 Small|
|Lemon juice||2 Tablespoon|
In a small bowl, combine chiles, cilantro, onions, tomatoes, oil, and vinegar.
If made ahead, cover and refrigerate until next day.
Pit, peel, and quarter avocados; drizzle all over with lemon juice.
Set bowl of salsa in center of a large platter and arrange avocado wedges around it.
To eat, top avocados with salsa.
