Cucumber & Mixed Herb Salsa

  White wine vinegar 1⁄2 Cup (8 tbs)
  Minced fresh cilantro 1⁄4 Cup (4 tbs) (Coriander)
  Minced fresh mint leaves 1⁄4 Cup (4 tbs)
  Minced fresh dill/2 teaspoons dill weed 2 Tablespoon
  Dijon mustard 4 Teaspoon
  Sugar 2 Teaspoon
  Cucumbers 2 Large, peeled, seeded, and diced
  Firm ripe tomato 1 Large, cored, seeded, and diced
  Salt 1⁄4 Teaspoon

In a medium-size bowl, stir together vinegar, cilantro, mint, dill, mustard, and sugar.
Mix in cucumbers, tomato, and salt.
Cover and refrigerate for at least 1 hour or for up to 2 days.
