Cucumber & Mixed Herb Salsa
|White wine vinegar||1⁄2 Cup (8 tbs)|
|Minced fresh cilantro||1⁄4 Cup (4 tbs) (Coriander)|
|Minced fresh mint leaves||1⁄4 Cup (4 tbs)|
|Minced fresh dill/2 teaspoons dill weed||2 Tablespoon|
|Dijon mustard||4 Teaspoon|
|Cucumbers||2 Large, peeled, seeded, and diced|
|Firm ripe tomato||1 Large, cored, seeded, and diced|
In a medium-size bowl, stir together vinegar, cilantro, mint, dill, mustard, and sugar.
Mix in cucumbers, tomato, and salt.
Cover and refrigerate for at least 1 hour or for up to 2 days.
