Goat Cheese Quesadillas With Green Chile Salsa
|Goat cheese||4 Ounce, softened (1 Package)|
|Shredded low fat monterey jack cheese||4 Ounce (1 Cup)|
|Chopped fresh cilantro||1⁄4 Cup (4 tbs)|
|Chili powder||1 Tablespoon|
|Canned red beans||15 Ounce, drained, rinsed|
|Fat free flour tortillas||8 (8 Inch)|
|Cooking spray||2 Tablespoon|
|Green chile salsa||1⁄2 Cup (8 tbs)|
Preheat oven to 350°.
Combine first 5 ingredients in a bowl; stir well.
Spread about 3/4 cup cheese mixture over each of 4 tortillas, leaving a 1/2-inch border.
Top each with a tortilla, pressing gently.
Place quesadillas on a large baking sheet coated with cooking spray; cover with foil.
Bake at 350° for 25 minutes or until cheese melts.
Cut each quesadilla into 4 wedges, if desired.
