Papaya Salsa

Ingredients
  Peeled seeded finely chopped papaya 2 Cup (32 tbs)
  Finely chopped mint 2 Tablespoon
  Seeded minced jalapeno pepper 2 Tablespoon
  Peeled minced ginger root 1 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
  Lime juice 2 Tablespoon
  Honey 1 Tablespoon
Directions

Combine first 4 ingredients in a medium bowl; toss well.
Combine lemon juice, lime juice, and honey; stir well.
Pour over papaya mixture; toss gently.
Cover and chill at least 2 hours.
