Mexican Beans With Cheese

Ingredients
  Water 2 Cup (32 tbs)
  Dried pinto beans 8 Ounce
  Onion 1 Medium, chopped
  Margarine/Butter / lard 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Shredded monterey jack cheese 1⁄2 Cup (8 tbs)
Directions

Cover and heat water, beans and onion to boiling; boil 2 minutes.
Remove from heat; let stand 1 hour.
Add just enough water to cover beans.
Heat to boiling; reduce heat.
Cover and boil gently, stirring occasionally, until beans are very tender, about 1 1/2 hours.
Mash beans.
Stir in margarine, salt and pepper until margarine is completely absorbed.
Stir in cheese.
