Mexican Beef & Beans In Lettuce Wraps

  Chorizo sausage 3⁄4 Pound
  Lean ground beef 3⁄4 Pound
  Onion 1 Large, chopped
  Garlic 2 Clove (10 gm), minced / pressed
  Chili powder 1 1⁄2 Teaspoon
  Ground cumin 1⁄2 Teaspoon
  Cayenne 1⁄4 Teaspoon
  Canned refried beans 17 Ounce (1 Can)
  Canned sliced ripe olives 2 1⁄4 Ounce, drained (1 Can)
  Canned diced green chilies 4 Ounce (1 Can)
  Shredded cheddar cheese 8 Ounce (2 Cups)
  Sour cream 1⁄2 Cup (8 tbs)
  Thinly sliced radishes 3 Tablespoon
  Thinly sliced green onion 3 Tablespoon
  Butter lettuce head 2 Large
  Salt To Taste
  Pepper To Taste

Crumble sausage and beef in a large frying pan and cook over medium heat, stirring occasionally, until meat is lightly browned.
Remove meat and discard all but 2 tablespoons drippings.
Add onion, garlic, chili powder, cumin, and cayenne; continue cooking, stirring, until onion is limp.
Stir in refried beans, olives, and chilies; reduce heat to low and cook, stirring, until bubbly and hot.
Stir in 1 cup of the cheese and salt and pepper to taste.
Turn into a shallow 1 1/2-quart baking dish.
Sprinkle remaining 1 cup cheese over top.
Broil about 6 inches from heat just until cheese melts (about 3 minutes).
Mound sour cream in center; sprinkle with radishes and green onion.
Spoon mixture into lettuce leaves, roll up, and eat out of hand.
