Spicy Mexican Shrimp & Avocado Cocktail
|Shrimp||1 Pound (Boiled and chilled in refrigerator)|
|Corona beer||1⁄2 Cup (8 tbs)|
|Clam juice||1⁄2 Cup (8 tbs)|
|Ketchup||1⁄3 Cup (5.33 tbs)|
|Lime juice||3 Tablespoon|
|Cilantro||1⁄3 Cup (5.33 tbs), finely chopped|
|Red onion/White onion||2 Tablespoon, finely chopped|
|Jalapeno||3 Tablespoon, finely chopped|
|Avocado||2 , diced|
1. Cook shrimp in a medium pot of boiling salted water for one minute. Drain shrimp, then cool and chill.
2. In a mixing bowl, stir together Corona Extra beer, clam juice, ketchup, lime juice, cilantro, onion, and jalapeño in a medium bowl. Stir in chilled shrimp, then gently stir in avocado.
3. Fill 4 cocktail glasses.
4. You could serve this in a martini glass to make it look extra sexy as an appetizer.
