Mexican Chili Con Queso

Ingredients
  Onions 1 Cup (16 tbs), chopped
  Shortening 1 Tablespoon
  Tomatoes 1 1⁄2 Cup (24 tbs), chopped and well-drained
  Canned long green chilies 4 Ounce (1 Can, Reserving Liquid)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Velveeta cheese 1 Pound, grated
  Toasted tortilla chips 5 Ounce
Directions

Saute onions in shortening until tender.
Add tomatoes, chilies, salt, pepper and cheese.
Cook in double boiler slowly for 30-40 minutes.
Add liquid from chilies if mixture becomes too stiff.
