|Chopped onion||1⁄2 Cup (8 tbs)|
|Cooking oil||1 Tablespoon|
|Canned refried beans||15 Ounce (1 Can)|
|Tomato||1 Medium, chopped|
|Shredded cheddar cheese||1 1⁄2 Cup (24 tbs)|
|Shredded lettuce||1 Cup (16 tbs)|
|Avocado||1 Small, seeded, peeled, and cut in 6 wedges|
|Red chili sauce||1 Cup (16 tbs)|
In 1 1/2 quart casserole, cook onion in oil, covered, at HIGH for 2 minutes or till tender, stirring once.
Cook at HIGH for 5 minutes or till heated through, stirring twice.
Lightly salt tomato.
Spoon 1/3 cup bean mixture onto each tortilla near one edge.
Top with cheese, lettuce, tomato, and an avocado wedge.
Fold edge nearest filling up and over filling just till mixture is covered.
Fold in two sides envelope fashion, then roll up.
Place in 13 x 9x 2-inch baking dish.
Cook, covered, at HIGH for 6 to 7 minutes or till heated through.
Pass Red Chili Sauce.
