Mexican Cornbread Casserole
|Ground beef||1 Pound|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Jalapeno pepper||2 Tablespoon, chopped|
|Eggs||2 , beaten|
|Cream-style corn||2 Cup (32 tbs)|
|Milk||2⁄3 Cup (10.67 tbs)|
|Cornbread mix||6 1⁄2 Ounce (1 Package)|
|American cheese slice||4|
Preheat oven to 425°.
Brown ground beef until crumbly; drain.
Add onions and jalapeno.
Combine eggs, 1 cup corn and milk with cornbread mix.
Pour half of the batter into greased pan.
Top with beef mixture, cheese and remaining cup of corn.
Pour other half of batter on top and bake for 25 to 30 minutes.
