Eggs Poached In Salsa
|For salsa sauce|
|Cilantro leaves||1⁄2 Cup (8 tbs)|
|Jalapeno||1 Teaspoon, chopped|
|Tomato||2 , coarsely chopped|
|Leek||3 , but into 3 inch stems|
|Vegetable juice||1 Tablespoon|
1. In a bender jar, add all ingredients of the salsa sauce and blend to get a smooth consistency.
2. In a skillet, pour the prepared sauce, allow it to simmer, poach the eggs into the sauce, cook for another 2 to 3 minutes.
4. Serve with tortilla and cream.
