Red Onion Salsa

Ingredients
  Vegetable oil 1 Tablespoon
  Red onion 1 Large, chopped
  Garlic 1 Clove (5 gm), minced
  Fish stock/Chicken broth 1⁄2 Cup (8 tbs)
  Dry red wine/Red wine vinegar 1⁄4 Cup (4 tbs)
  Dried thyme leaves 1⁄4 Teaspoon, crushed
  Ground black pepper To Taste
  Salt To Taste
Directions

Heat oil in small saucepan over medium-high heat.
Add onion; cover and cook 5 minutes.
Add garlic; cook 1 minute.
Add remaining ingredients.
Cover and cook about 10 minutes.
Uncover and cook until liquid reduces to 1/4 cup.
