Mexican Style Meat Loaf
|Egg||1 , beaten|
|Cornmeal||1⁄2 Cup (8 tbs)|
|Chopped onions||1⁄2 Cup (8 tbs)|
|Chopped green sweet pepper/One 4 1/2 ounce can diced green chili peppers, drained||1⁄4 Cup (4 tbs)|
|Canned whole tomatoes||7 1⁄2 Ounce, cut up (1 Can)|
|Chili powder||2 Teaspoon|
|Ground sage||1⁄2 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
|Ground pork||1 Pound|
|Lean ground beef||1 Pound|
1 In a large mixing bowl combine the egg, cornmeal, onion, sweet pepper or chili peppers, undrained tomatoes, chili powder, salt, sage, and black pepper. Add pork and beef; mix thoroughly. Shape into a 9x5-inch loaf in a shallow baking pan.
2 Bake meat loaf in a 350° oven about 1 1/4 hours or until juices run clear. If desired, serve with hot-style or salsa catsup.
