Roasted Bell Pepper Quesadillas
|90% lean ground beef||1⁄2 Pound (Extra Lean)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Freshly ground black pepper||To Taste|
|Shredded provolone cheese||4 Ounce (1 Cup)|
|6 inch corn tortillas||8 (Extra Thin)|
|Roasted bell pepper strips||1⁄2 Cup (8 tbs)|
|Chopped cilantro||1⁄4 Cup (4 tbs)|
Brown ground beef in medium skillet.
Add onions; cook until tender.
Season with salt and pepper to taste.
Sprinkle 2 tablespoons cheese onto each of four tortillas; cover with ground beef mixture, pepper strips, cilantro and remaining cheese.
Top with remaining tortillas.
Cook, in batches, in nonstick skillet over medium heat about 4 minutes or until cheese is melted, carefully turning after 2 minutes.
