Classic Mojito

Just goofing around making a Mojito one evening...
  Limes 1
  Simple syrup 1 Tablespoon
  Mint 1
  Rum 1 Tablespoon
  Soda 1 Cup (16 tbs)
  Ice 1

muddle mint in simple syrup and lime juice
add ice
add rum
add splash of soda

Summer sets the mood for barbeque parties and with it comes the need of party drink recipes. Nikko has this Classic Mojito recipe in his basket which he is making for his Tortilla Guy's birthday. It’s a highball with mint and lemon and served with lots of crushed ice. A refreshing drink like this one cannot miss the party menu.

I love the dark realllly good rum in a Mojito! I have a couple varities of mint growing and my favourite is a small leafed mint from a village in Iran that my gardening neighbour, Cyrus brought here when he left with his family about 30 years ago. It is amazing mint.

Cruzan Single Barrel Estate Rum would be my favorite I think. It's not one to be mixing with anything though - just drink it straight - all types of yum... For mixing I'm pretty open...
