Mexican Brunch Pie
|Eggs||5 Small, beaten|
|Butter/Margarine||2 Tablespoon, melted|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Cream style cottage cheese||8 Ounce (1 Carton)|
|Shredded monterey jack cheese||8 Ounce (2 Cups)|
|Canned chopped green chiles||4 Ounce, drained (1 Can)|
Combine first 4 ingredients in a mixing bowl; beat well at medium speed of an electric mixer.
Stir in remaining ingredients, and pour into a well greased 9 inch pieplate.
Bake at 400° for 10 minutes; reduce heat to 350°, and bake about 20 minutes or until set.
Cut into wedges to serve.
