|Unflavored gelatin||1 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Cold water||1 Cup (16 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Red food coloring||6 Drop|
|Green food coloring||6 Drop|
|Finely ground almonds||1 Cup (16 tbs)|
|Custard sauce||1 Cup (16 tbs)|
1. Mix gelatin and sugar in a saucepan. Stir in water. Set over low heat and stir until gelatin and sugar are dissolved. Chill until slightly thickened.
2. Beat egg whites until stiff, not dry, peaks are formed. Fold into gelatin mixture along with almond extract. Beat until mixture resembles whipped cream. Divide equally into 3 portions. Color one portion red, another green, and leave the last one white.
3. Pour red mixture into an 8-inch square dish or pan. Sprinkle with half of the almonds. Pour in white mixture and sprinkle with remaining almonds. Top with green layer. Chill thoroughly.
4. Cut into portions and serve with Custard Sauce.
