Hot Mexican Rice
|Raw long grain rice||1⁄2 Cup (8 tbs)|
|Green pepper||1 , diced|
|Seasoned pepper||1⁄4 Teaspoon|
|Chopped onion||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Chili powder||1 Tablespoon|
|Hot chili pepper||1 Small, chopped|
|Stewed tomatoes||1 Can (10 oz)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Seedless raisins||3⁄4 Cup (12 tbs)|
|Ground beef||1 Pound|
|Pine nuts||1⁄4 Cup (4 tbs)|
Heat Browning Skillet in Radarange oven 4 1/2 minutes.
Mix first 5 ingredients with oil in skillet; cook in oven 3 minutes, stirring several times.
Add meat, cook in oven 3 minutes.
Stir in remaining ingredients; cover, cook in oven 9 to 10 minutes.
Let stand, covered, 10 minutes.
Fluff with fork before serving.
