Caribbean Salsa goes well with poultry meat recipes. Caribbean Salsa gets its taste from mango and cucumber cubes mixed with lime juice. Caribbean Salsa is served with meat dishes.
Ingredients
  Mango cubes 2 Cup (32 tbs) (1/4 Inch Cubes)
  Peeled seeded cucumber cubes 1⁄2 Cup (8 tbs) (1/4 Inch Cubes)
  Chopped fresh cilantro/Chopped fresh parsley 1⁄4 Cup (4 tbs)
  Finely chopped green onion 2 Tablespoon
  Jalapeno pepper 1⁄2 , seeded and finely chopped
  Fresh lime juice 3 Tablespoon
  Firmly packed brown sugar 1 1⁄2 Teaspoon
  Minced fresh ginger 1 Teaspoon
  Black pepper 1 Dash
Directions

In medium bowl combine mango, cucumber, cilantro, green onion, jalapeno pepper, lime juice, brown sugar, ginger and black pepper.
Cover and refrigerate at least 1 hour to allow flavors to blend.
