Mexican Style Coconut Ceviche

Annmarie nailed it with this recipe… She adapted a regular ceviche dish (with raw fish) and used young Thai coconut to make this raw food ceviche recipe. It’s awesome! There’s also a special appearance from the “real” star of this show at the end! He’s got a couple of things to tell you… :-) Take a look…
Ingredients
  Young coconut 2 , meat julienned or noodled
  Limes 2 , juiced
  Cucumber 1⁄2 , julienned or noodled
  Red pepper 1 , julienned
  Cherry tomatoes 1⁄4 Cup (4 tbs), chopped finely (Handful Of)
  Red onion 1⁄2 Small, chopped finely
  Jalapeno 1 Small (Depending On Your Taste)
  Garlic 1 Clove (5 gm)
  Cilantro 1⁄4 Cup (4 tbs) (Handful Of)
  Dulse flakes 1 Teaspoon
  Mexican oregano 1 Teaspoon
  Coconut water 2 Tablespoon (A Splash Or Consistency You Like)
  Sea salt 1 Pinch (Or To Taste)
Directions

Combined all ingredients in bowl cover and let marinate for 1 hour in the fridge. Serve with cilantro, avocado, and raw tortilla chips! Enjoy
