Cranberry Salsa

  Fresh cranberries 2 Cup (32 tbs)
  Grated orange peel 4 Teaspoon
  Oranges 2 Large, white membranes removed, peeled, chopped, and drained
  Minced onion 1⁄4 Cup (4 tbs)
  Salad oil 1⁄4 Cup (4 tbs)
  Minced fresh cilantro 1 Tablespoon (Otherwise Called Coriander)
  Minced fresh ginger 1 Tablespoon
  Fresh hot green chile 1 Small, seeded and minced (Use Jalapeno Or Serrano)
  Salt To Taste

Chop cranberries in a food processor or blender, half at a time.
Combine cranberries, orange peel, drained oranges, onion, oil, cilantro, ginger, and chile.
Stir to blend; season to taste with salt.
If made ahead, cover and refrigerate until next day.
