Mexican Orange Candy
|Sugar||3 Cup (48 tbs)|
|Boiling water||1⁄4 Cup (4 tbs)|
|Evaporated milk||1 Cup (16 tbs)|
|Grated orange rind||2 Teaspoon|
|Nuts||1 Cup (16 tbs)|
1. Place one cup of the sugar in a heavy saucepan over medium heat and cook, stirring occasionally, until the sugar begins to melt. Then stir constantly until all the sugar is melted and deep golden brown in color. Add the boiling water to the caramelized sugar and cook to a smooth syrup, stirring constantly.
2. Add the remaining sugar, milk and salt and cook over medium heat to 238° F. (mixture forms a soft ball in cold water), stirring constantly. Add the orange rind. Cool and stir in the nuts. Beat until crystalline. Drop from a teaspoon onto waxed paper.
