Guacamole With Tortilla Chips
|Gelatin||3 1⁄2 Ounce (1 Package, Jell- O Brand Lemon Flavored)|
|Boiling water||1 Cup (16 tbs)|
|1% low fat cottage cheese||16 Ounce (1 Container)|
|Ripe avocado||1 Cup (16 tbs), chopped|
|Chopped green onions||3⁄4 Cup (12 tbs), divided|
|Pickled jalapeno peppers||1⁄4 Cup (4 tbs), drained (Slices)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm)|
|Chili powder||2 Teaspoon|
|Chopped tomato||1⁄4 Cup (4 tbs)|
|Pitted ripe olives||4|
|Tortilla chips||2 Cup (32 tbs) (Chili)|
Completely dissolve gelatin in boiling water; pour into blender container.
Add cottage cheese, avocado, 1/2 cup green onions, jalapeno peppers, lemon juice, garlic and chili powder; cover.
Blend on low speed, scraping down sides occasionally, about 2 minutes or until mixture is smooth.
Pour into shallow 5 cup serving dish; smooth top.
Chill until set, about 4 hours.
When ready to serve, top guacamole with remaining 1/4 cup chopped green onions, tomato and olives.
