Vegetable Burrito Banditos
|Shredded carrots||1⁄2 Cup (8 tbs)|
|Chopped broccoli||1⁄2 Cup (8 tbs)|
|Chopped cauliflower||1⁄2 Cup (8 tbs)|
|Green onions||2 Small, thinly sliced|
|Nonfat ranch salad dressing||1⁄4 Cup (4 tbs)|
|Shredded low fat cheddar cheese||1 Cup (16 tbs)|
|Chili powder||1⁄2 Teaspoon|
|Flour tortillas||4 (7 Inch)|
|Torn iceberg lettuce||1 Cup (16 tbs) (Bite Size Pieces)|
In a mixing bowl, combine carrots, broccoli, cauliflower and onions with cheese, dressing and chili powder.
Lay tortillas flat on the counter and spoon about 1/2 cup vegetable mixture and 1/2 cup lettuce down center.
Wrap each tortilla around vegetable mixture.
