|Tomatoes||1 Pound, chopped|
|Green onion and tops||1⁄4 Cup (4 tbs), finely chopped|
|Light soy sauce||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Jalapeno pepper||1 Medium, seeded and minced|
Prepare Homemade Salsa and set aside.
Brush both sides of tortillas lightly with oil.
Bake in 425° oven for 7 to 8 minutes or until golden brown.
Heat 1 teaspoon oil in medium saucepan; add green onions and garlic.
Saute for 1 minute.
Stir in beans and soy sauce; simmer for 1 minute.
Remove from heat and cool slightly.
Divide beans evenly among tortillas; spread to edges.
Arrange cabbage, tofu and salsa in layers over beans.
Top with avocado.
