Tamale Cheese Topping
|Water||3⁄4 Cup (12 tbs)|
|Prepared tortilla flour/Yellow cornmeal||3⁄8 Cup (6 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Monterey jack cheese/Queso bianco||4 Ounce, shredded|
|Freshly ground pepper||To Taste|
Combine water and salt in 1 1/2 quart saucepan and bring to boil over high heat.
Reduce heat and stir in tortilla flour or cornmeal.
Cook, stirring constantly, until smooth and thick, about 5 minutes.
Let cool about 15 minutes.
Add sour cream, egg yolks and cheese and beat until well blended.
Taste and adjust seasoning.
Spread over hot chili.
