Tamale Cheese Topping

The Tamale Cheese Topping is a wonderful and delicious topping for your chili. You simply have to try this easy to follow Tamale Cheese Topping recipe! Trust me its addictive!
Ingredients
  Water 3⁄4 Cup (12 tbs)
  Prepared tortilla flour/Yellow cornmeal 3⁄8 Cup (6 tbs)
  Sour cream 1⁄2 Cup (8 tbs)
  Egg yolks 2
  Monterey jack cheese/Queso bianco 4 Ounce, shredded
  Salt To Taste
  Freshly ground pepper To Taste
Directions

Combine water and salt in 1 1/2 quart saucepan and bring to boil over high heat.
Reduce heat and stir in tortilla flour or cornmeal.
Cook, stirring constantly, until smooth and thick, about 5 minutes.
Let cool about 15 minutes.
Add sour cream, egg yolks and cheese and beat until well blended.
Taste and adjust seasoning.
Spread over hot chili.
