Ingredients
  Onions 2 Medium, chopped
  Carrots 2 , peeled, sliced
  Pork roast 5 Pound (Loin / Shoulder)
  Salt 2 Teaspoon
  Oregano 1⁄2 Teaspoon
  Ground coriander 1⁄2 Teaspoon
  Beer 3⁄4 Cup (12 tbs)
Directions

Place onions and carrots in roasting pan.
Rub pork with salt, oregano, and coriander.
Place on vegetables; add beer.
Cover; roast at 350°F 2 3/4 hours.
Add more beer if vegetables become dry.
Slice and serve pork with Green Sauce
