Prawns In Green Salsa
|Blue corn tortillas||1 Cup (16 tbs)|
|Tomatillos||10 , husked, well rinsed, and quartered|
|Chile||3 , seeded, thinly sliced|
|Olives||6 , pitted and slices|
|Olive oil||1 Teaspoon|
|Green salsa||3 Tablespoon|
|Sour cream/Yogurt||1⁄4 Cup (4 tbs)|
Loosely wrap in foil as many tortillas as you think you can eat, keep in warm oven.
Rinse prawns briefly, drain.
In a heavy frying pan, heat oil over medium high heat.
Add tomatillos, chiles, and olives.
Stir in 2 to 3 tablespoons water; reduce heat and simmer, partially covered, until vegetables are soft, about 10 minutes.
Add salsa and prawns; heat through.
To serve, spoon a large prawn, some sauce, and a dollop of sour cream into a warm tortilla, roll up and eat.
